Summer Salad

This salad is so versatile. The secret is in the herb topping. There are so many combinations of the seasonal herbs that the flavour of the salad is different every time you make it.

Ingredients

  • Use any salad veg that is ready, lettuce, radish, pepinos, tomatoes, chopped baby courgettes, contrast with thinly sliced red onion, carrot and beetroot match sticks. Take a few baby beetroot leaves and baby leaves from the radish as well, if you like.

  • parsley and coriander
  • parsley and mint

  • coriander and chives
  • french tarragon and parsley
  • fennel and parsley
  • dill and parsley

Method

Chop the salad ingredients and put in a salad bowl.

Finely chop the herb combination of your choice and put a handful on top of the chopped salad.

Dress simply with good olive oil and white wine vinegar.

Serve with barbequed chicken, steak, salmon, ribs, whatever you fancy
